Our Meats and Poultry

Our farm menu: We offer a full selection of beef, lamb, and pork cuts as well as roasting chickens and turkeys seasonally. Our meats and poultry are all processed according to USDA guidelines and are sold frozen in cryo-vacuum sealed packages. As we are a small farm, it is incredibly difficult for us to offer “fresh” or unfrozen meat cuts due to the logistics and scheduling of our products. Offering frozen meat is the best, most efficient and sustainable way for our small farm to bring our meats to the market, while maintaining a broad selection. Occasionally, we are able to offer fresh (unfrozen) meats at our markets.   Please check with us! 

 

Beef -

We offer our own grass-fed Belted Galloway Beef, custom processed and butchered at certified USDA facilities in NY, VT and NH. The beef is hung and dry aged for two weeks, a process done to enhance the flavor and improve the tenderness of the meat. Daily, we offer a wide selection of cuts, however because we are a small farm, our offerings do change within a two week cycle. Current Price List.

Pork -

We offer our own heritage and non heritage breed pastured pork, custom processed and butchered by certified USDA facilities in NY, VT and NH.  We offer a full selection of smoked or cured meats. These items are smoked according to USDA guidelines, which call for the use of minimal amounts of nitrates in the processing. This is standard for all USDA smoked meats. We do also offer a limited selection of all natural, nitrate-free cured meats on an occasional basis. Lamb

We offer our own Dorset, Dorset cross and Icelandic lamb, custom processed and butchered by certified USDA facilities in NY, VT and NH. The lamb is hung and dry aged for one week, a process done to enhance the flavor and improve the tenderness of the meat. Chicken

We offer our own Cornish-Rock cross, and heritage breed chicken, custom processed and butchered by a certified USDA facility in VT.  At the moment our chicken is only available as whole, processed birds ranging in size between 3-6 lbs.  Current Price List.

Turkey

We offer traditional broad-breasted white turkeys and heritage type birds, custom processed and butchered by a certified USDA facility in VT.  Our turkeys are available as whole, processed birds only and are available seasonally: November- December. 

  • Thanksgiving Orders:  All turkeys are available fresh (unless requested otherwise) and require a $25, non-refundable deposit, per bird.  Thanksgiving Order Form.  
  • All other turkey orders are available frozen, and no deposit is required.  Holiday Order Form.

Eggs

We offer our own eggs from free-range, pastured chickens.  Eggs are collected daily and available in half and full dozen packages.  Eggs are available for purchase at our farmers’ markets, by delivery or through a customized CSA share.

Packaging Note:  Often our eggs are packaged in recycled cartons returned to us from customers.  As always we look for ways to cut costs and greatly appreciate returned cartons!

Availability: 

Our farm works very hard to offer a broad and varied selection of meats and poultry products and cuts. Because we are a small farm, occasionally the  products listed on our website are unavailable for short periods of time. We make our best effort to supply all requests and orders as quickly as we can, however ask for a two-three week lead time for all custom orders and requests.

  • Fresh Meats:  We can thaw an order in advance for a special request, and require the order to be paid in full in advance.
  • Special Requests/ Custom Orders

Packaging and Labeling: 

Our meats and poultry are mostly sold frozen in cryo-vacuum sealed packages.  Packages range in size, depending upon the item, but are generally proportioned for single to small families.  Packages are labeled with our farm name, or processing facility and their contact information.  

Primal & Whole Animal Sides:

Whole Animal Sides: Often our farm receives inquiries for sides of beef, lamb or pork. This involves many steps including calculating size/quantity needs, having the animal custom butchered and packaged, and determining the cuts and – which often results in cuts customers cannot use or do not want.  Due to the logistics and the many complexities associated offering whole side orders, we do not offer custom sides of beef, lamb or pork, but rather a volume discount for large orders.
